Moroccan food, written to be cooked

Moroccan Cooks is a food website dedicated to sharing the flavours, recipes, traditions and culinary culture of Morocco with food lovers around the world.

Why this site exists

Moroccan food travels badly in writing. Recipes get shortened until the method disappears, spice quantities get halved for a nervous audience, and the dishes that Moroccans actually cook on a Tuesday evening rarely make it online at all.

We started Moroccan Cooks to write the other kind of recipe: the full method, the real quantities, the reason a step exists, and an honest note about what happens if you skip it.

How we work

Every recipe is cooked in an ordinary home kitchen before it is published — a domestic hob, a normal oven, ingredients bought from a normal shop. Where a traditional method needs equipment most people do not own, we test the version that works without it and tell you what changes.

When something is genuinely worth the effort, we say so. When a shortcut costs you nothing, we say that too.

What you will find here

  • Tagines, couscous and the slow-cooked centrepieces of the Moroccan table.
  • The everyday repertoire — cooked salads, pulse soups, vegetable dishes and bread.
  • Breakfast breads, pastries and the sweets that appear during Ramadan and at celebrations.
  • Background articles on spices, techniques and the traditions behind the food.

A note on authenticity

Morocco is not one kitchen. A tagine in Fez is not a tagine in Agadir, and every family will tell you their grandmother’s version is the correct one. Where a dish has several legitimate forms we pick one, say which region or household it leans toward, and note the common variations rather than pretending there is a single right answer.
